Turai or Ridged gourd is a squash grown in warmer climates of the world. It’s a vegetable of delicate taste, and tastes delicious with even a simple sauté and seasonings. When cooked with meat, the subtle flavor of the vegetable laced with meat is pleasantly unique. This Indian vegetable is my garden favorite and among the favorite recipes in our family.

Turai or Ridged gourd is a squash grown in warmer climates of the world. It’s a vegetable of delicate taste, and tastes delicious with even a simple sauté and seasonings. When cooked with meat, the subtle flavor of the vegetable laced with meat is pleasantly unique. This Indian vegetable is my garden favorite and among the favorite recipes in our family.

Ingredients

  • 1 lb ridged gourd, peeled, chopped
  • 1 lb meat (goat or lamb)
  • 1 onion, chopped
  • 3 tomatoes, chopped
  • 1 1⁄2 t red pepper powder
  • 1⁄2 t turmeric
  • 1 t corriander seeds powder
  • 1 salt
  • 1 t ginger paste
  • 1 t garlic paste
  • 2 T oil

Instructions

In a pot, add oil and let it warm. To the warm oil, add the ginger and garlic pastes and sauté. Next add the meat followed by sliced onion, chopped tomato, salt, turmeric, red pepper powder, coriander powder, and sauté together till all the water gets absorbed. This process makes the meat absorb the spice.

Now add 1 to 2 cups of water and let cook with a closed lid or cook in a pressure cooker. When the meat has got cooked, add the peeled and chopped ridged gourd to the pot. Make sure you slow cook and do not stir a lot, the ridge guard is a soft and delicate vegetable and can mush easily. When the vegetable has got cooked and a good consistency of curry is formed, garnish with cilantro and serve with warm roti/ paratha or flat bread.

Notes

The luffa or Loofah sponges used like a body scrub are actually derived from the matured and dry ridged gourd.
