Ingredients
  • 1 lb shrimp
  • 1 onion
  • 3 tomato
  • 1 t ginger paste
  • 1 t garlic paste
  • 1 1⁄2 t red pepper powder
  • 1⁄2 t turmeric
  • 1 t salt (add to taste)
  • 1 green chilies or jalepenos
  • 1 T cilantro or corriander leaves (choppped)
  • 2 cardamom
  • 1 cinnamon stick
  • 2 cloves
  • 2 T oil
Instructions
  1. In a non stick or heavy base skillet, heat the oil. When oil is warm add the ginger garlic pastes, the fresh ginger and garlic emanates an aroma when sautéed. To this add a large finely chopped onion. Next drop in some of the garam masala ingredients: cloves, cardamom, and cinnamon, these too emanate a pleasant aroma. When the onion starts to get translucent, add 3 large tomatoes, finely chopped. Sauté this together on low flame for some time, next add the spices: red pepper powder, turmeric and salt and sauté further. The curry base is ready to add the shrimp. If you have bought a pre peeled and deveined packet of cooked shrimp from your grocery store, you may add it to the tomato and onion base at this point. But if you bought fresh shrimp from you seafood center at your groceries or super market, you would have to peel the shell and devein the shrimp first, followed by prepping* the shrimp to add to the curry.
  2. *Prep the fresh shrimp by lightly sautéing it in a separate pan with dash of salt, turmeric and red pepper. This makes any fishy smell in the shrimps go away while the water gets absorbed. No oil or water needs to be added to this pan.
  3. The shrimp after they are added to the tomato and onion curry base need to be cooked on low flame. Add the slit green chilies or jalapeños and cilantro to this and let look for some more time. A soup like consistency is formed, but if your curry doesn’t have this consistency, you may add ½ cup water and cook further.
  4. Garnish this with more cilantro and serve with jasmine flavored white rice or basmati rice or even with fresh French bread.
