Sweet Lassi –Sweet Buttermilk
Sweet Lassi is a sweet buttermilk drink with has its origins in Punjab, North India. This drink is an excellent coolant on a hot day and very refreshing. Another great drink for the summer.

Ingredients
  • 4 c plain yogurt
  • 1 c milk (add more per consistency)
  • 1 c butter pecan ice cream or any ice cream with nuts
  • 3⁄4 c sugar to taste
  • 1⁄2 nuts (mix of pistachios, pecans/walnuts, almonds)
  • 1 tsp rose essence
  • 15 ice cubes
  • 2 t rose syrup/ rooh afza*
  • whipped cream-optional
Instructions
  1. In a juicer or blender, add the yogurt and ice cubes and let it blend well to a buttery consistency. Next add the sugar, the nuts, the rose essence and the milk and blend well. The nuts can be blended to powder separately and added for smoother texture or added directly when blending the drink, according to taste.
  2. Lastly add the butter pecan ice cream or any ice cream with nutty flavor and give it one more last spin. Serve in tall glasses and top with whip cream and a drizzle of pink rose syrup if desired.
Notes
* Rose Syrup/ Rooh Afza- Rose syrup is available in most grocery stores, but Rooh Afza, a rose flavored drink concentrate is available in Asian and Mediterranean stores. Either one can be used for the rose flavoring. But the drink is delicious even if the syrup is skipped.
