Sheer Qoorma - Vermicelli Milk Dessert
Sheer Qoorma is a specialty sweet made especially during the month of Ramadan. The taste is simply delicious while the method is deliciously simple!

Ingredients
  • 4 c whole milk
  • 1 c vermicelli/ sevian
  • 1⁄2 c sugar
  • 4 cardamom
  • 1 cinnamon flat sticks
  • 8 almonds
  • 8 cashews
  • 12 raisins
  • 4 T ghee(clarified butter)/ butter
  • 8 dry pitted dates
  • 1 t cudpahnut or chironji (optional)
  • 1 t shelled watermelon seeds ( optional)
  • 1 t shelled cantaloupe seeds (optional)
Instructions
  1. In a thick based or copper bottom pot, slowly roast the vermicelli to golden brown and set aside. This step can be skipped if you have bought the roasted vermicelli packets. In the pot, next add ghee/ clarified butter and fry the almonds, cashews and raisins and set aside.
  2. In the same ghee add the cinnamon and cardamom, this releases a very pleasant aroma and flavor when fried. To this add the milk. When the milk gets warm add the vermicelli or sevian, and the dry deseeded dates. Cook the vermicelli till tender before adding the sugar. Sugar is added in the end to avoid burning the sevian in the base. Check the taste and add sugar if required. Add the optional nuts for more authentic Hyderabadi flavor and let cook for few minutes. Garnish with fried slivered almonds, cashews and raisins. Serve warm.
Notes
For a very rich flavor, half and half could be substituted for whole milk. Another alternative is adding half cup condensed milk for extra richness besides the whole milk.
