Potato Cutlets – Aloo Tiki Bites
Potato cutlets or Aloo Tiki’s are tasty crunchy bites which are perfect for appetizers with green chutney or Imli/Tamarind chutney and Choley chat; they make great vegetarian sides, and I also use them in my kids lunches for Aloo Tikki Sandwich!

Ingredients
  • Boiled and Mashed potatoes: 4-5 cups
  • Onion- 2 chopped
  • Jalapenos/green Chilis- 3 chopped
  • Salt- 1 tsp or to taste
  • Cumin powder- ½ tsp
  • Red Chili powder-1/2 tsp
  • Black pepper-1/2 tsp
  • Chaat masala—1/2 tsp( available in Indian stores)
  • Ginger – finely chopped- ¼ tsp
  • Cilantro- ½ cup chopped
  • Egg- 1 lightly beaten
  • Semolina/Sooji Rawa- 3 tblsp
  • Oil- to shallow fry
Instructions
  1. Boil the potatoes in water in a pot, peel them and mash them to a soft batter. Boil the potatoes in a pressure cooker to expedite the boiling process. If using left over mashed potatoes from you Thanksgiving dinner, skip this step.
  2. In a bowl, add the mashed potatoes, chopped onions, chopped jalapenos, cilantro, ginger, salt, black pepper, red pepper powder, and Chaat Masala (if unavailable in your pantry, skipping this will be ok) .
  3. Fold this batter together or mix it all together by hand to let the batter be evenly mixed and seasoned. Set this aside till you make the egg wash.
  4. Beat an egg and prepare an egg wash in a bowl. Set a plate with semolina/Sooji Rawa. After shaping the cutlet into circles, dip the cutlet in the egg wash, followed by dipping in semolina crumbs on both sides and fry in warm oil on the skillet. Take it out on a paper napkin to absorb the oil and then the delicious and crunchy potato cutlets are ready to serve.
Notes
This recipe I made from left over mashed potatoes from the thanksgiving dinner. But this same recipe applies when you simply boil and mash potatoes without the mashed potato additives like butter. The cutlets from leftover mashed potatoes batch may have been more buttery because of the butter;) But the cutlets without butter are equally delicious.

There are many versions to a simple Aloo tiki or potato cutlet. I sometimes have additions like lemon juice, or yogurt etc to make a variation. But I suggest start with the basic cutlet and make additions and substitutions with other vegetables etc over time.
