How to set Dahi - Yogurt - Curd
Dahi is the Hindi word for Yogurt, a diary product made by bacterial fermentation of milk. The traditional way of setting dahi or yogurt in India was in an earthenware pot to keep the temperature of the yogurt cool naturally. But yogurt can be set at home in simple easy steps too.

Ingredients
  • 2 c milk
  • 1 t starter- any yogurt of your choice ( greek or organic or low fat or probiotic or any favorite brand)
Instructions
  1. In a clean stainless steel pot heat the milk to a boil. After it reaches its boil, set aside to cool till its luke warm or around 112 degree F/45 degree C . (You can sense the luke-warmness by dipping a finger in the milk). Now pour this milk into a pretty serving bowl. Next add the spoon of yogurt culture and stir into the bowl of milk.
  2. Set this bowl overnight or at least for 5- 7 hrs in a warm place. I have multiple options;
  3. You may keep the bowl of milk with starter in the oven with the light on. The warmth coming from the bulb is good for the milk to thicken into yogurt with the active cultures.
  4. OR you may keep the bowl in a large insulated food warmer casserole with lid. This helps set keeping the warmth contained.
  5. OR Setting the in any warm corner of the kitchen will suffice too.
  6. When the yogurt has thickened and set, keep the bowl in the refrigerator. And serve cold. Spare a spoon to set the next batch of yogurt.
  7. Yogurt also called Dahi or Curd in India is used to make Raita, Curd Rice, Lassi, Butter milk and more. When its a main ingredient in certain recipes, it can be cost effective to set it at home if you need yogurt in large quantitites.And ofcourse fresh home made yogurt also has an unique taste;)
