Tandoori Chicken
Tandoor though means hot clay oven, this traditional Tandoori chicken can be made in any conventional oven or can be grilled on the barbeque. Tandoori chicken is a famous spicy chicken dish often served as a side to mutton biryani or vegetable biryani. Tandoori chicken can be served with some sliced red onions and green peppers and yogurt raita to be eaten with naan or flat bread.

Ingredients
  • 3 lb chicken (large pieces)
  • 2 T ginger-garlic paste
  • 1 c yogurt
  • 2 T lemon juice
  • 2 t red pepper powder
  • 1 t garam masala (cardamom, cinnamon, cloves)
  • 1 t coriander powder
  • 1⁄2 t ground black pepper
  • 1⁄2 t turmeric
  • 1 1⁄2 t salt
  • 3 T canola/ vegetable oil
  • 2 T tandoori chicken masala (optional)
  • 1 pn red food color( optional)
  • 3 jalapeno green peppers
Instructions
  1. First wash the chicken and drain out the water by keeping the chicken in a sieve. Make some slits with knife and pricks with a fork all over in large chicken pieces. Drumsticks and breast pieces are the best option.
  2. Apply ginger-garlic paste, garam masala, red pepper powder, coriander powder, turmeric, ground black pepper, salt, lemon juice, yogurt, red food color (optional) and tandoori chicken masala( optional) to the chicken. Marinate this chicken for 3-5 hrs and before cooking in the oven add oil to the pan. Cook for approximately 45 min or till done at a temperature of 350 degrees.
  3. Garnish the chicken with the slit green peppers and squeeze some juice of fresh lemon and keep in oven for few more minutes before serving. Serve the spicy red tandoori chicken with some cut lemons for a spectacular and tasty dish.
Notes
Tandoori Chicken Masala is an optional ingredient, available at Indian stores or in specialty grocery stores which carry these in the international aisle.
