Pepper Garlic Potatoes

Pepper and Garlic Potatoes make a versatile side dish to any meal. It can be served with baked fish as a side for dinner, or as a side in a south Indian lunch with Rasam and rice. These crispy potatoes tossed with the goodness of black pepper and garlic, makes you want to eat this carbohydrate 😉

Pepper Garlic potatoes

Ready in 15 minutes;Serves 4 people

Ingredients

  • Potatoes -4 large
  • Black pepper – 1 tsp
  • Garlic paste- 1 tblsp
  • Salt to taste
  • Oil

Preparation

  1. Peel the potatoes and soak in water.
  2. Horizontally cut each potato and thinly slice the potatoes to make semi-circle chips.
  3. Soak these chips in water till you fry them in oil
  4. Take a flat wide pan and pour some oil and shallow fry the potatoes to lightly crisp.
  5. While the potatoes are frying, mix minced garlic, black pepper, and salt together.
  6. Add the garlic and pepper to the crispy potatoes and toss together to get them all individually seasoned.
  7. Cover the pan with a lid for the potatoes to absorb the pepper and garlic flavors in its own steam.
  8. Toss the pan of potatoes around for a mix of crispy and soft peppery garlic potatoes.
  9. Serve warm to enjoy its crispy flavors.

 Tips

soak peeled potatoes in water

Peeled Potatoes have to be soaked in cold water to avoid browning or blackening of the potatoes due to oxidation.
