Loquat Salsa
Loquats are sweet and tangy fruits commonly cultivated in Southeast Asian, Mediterranean and tropical countries. Loquat is a Chinese word but it’s also called the Japanese plum! Loquat salsa was a creation inspired from my mango salsa recipe!

Ingredients
  • 2 T green onion( chopped)
  • 1 jalapeño
  • 1 tomato
  • 1⁄2 bell pepper
  • 2 T cilantro(chopped)
  • 1 lime juice
  • ds salt
  • ds pepper
  • 12 loquats
Instructions
  1. Wash the Loquats, pit the seeds and chop the fruit. Chop the green onion, jalapeño, tomato, bell pepper, and cilantro and bring together in a bowl after squeezing in some lemon juice. Add a dash of salt and pepper and serve. It’s a colorful, fresh and exotic salsa. It goes very well with baked fish similarly like the mango salsa.
Notes
I have a small evergreen Loquat tree in my backyard, but my neighbors have a bigger one with abundance of bright yellow fruit. This salsa was made from the basket of fruit our good neighbors shared with us. Loquats look like the popular Chinese fruit kumquats but are not related. The kumquats are more like the orange, but eaten wtih the skin and loquats are more like the plum or peach. When Chinese new year or lunar new year is celebrated, kumquat trees are a popular décor element and a traditional gift because they are considered a sign of financial good luck! Hope the Loquats in my backyard are good for me too ;)
