Todays Lunch – Egg Quesdilla’s
Summer is over and schools have started. Now every morning its quiet an ordeal to plan and pack lunch boxes to send to school. Children like a variety instead of same things in their lunch box. And to make sure kids eat this important meal of the day and to keep things interesting and healthy, it’s always a good idea to seek new recipes for lunchboxes.
Here’s my new installment of lunch box ideas. Please share if you have any unique and interesting ideas you use, so all the Hot Sweet Spicy moms or dads benefit from each other’s ideas.
Egg Quesadillas

Servings: 4
Ingredients
• 1 Kosher Hot Dog, sliced or chopped
• 1 Onion- Diced
• 1 Bell Pepper- red or orange -Seeded And Diced
• 2 Jalapeno- Seeded And Diced
• 3 Eggs
• ½ cup Milk
• Salt And Pepper, to taste
• 4 Wheat Tortillas or Indian Rotis
• 4 tblsp shredded cheese
• Olive oil
• Butter
Preparation Instructions:
In a little oil, sauté the kosher hot dog slices on a skillet and scoop and pile on a plate. In the same skillet add onions, bell pepper and jalapenos and sprinkle some salt and pepper for good taste. Stir till the onion and peppers are soft, yet crunchy. And scoop it out and pile in the plate.
The juices of the hot dog cooked in same skillet earlier give a lot of flavor to the vegetables. I use kosher hot dogs since we don’t use bacon, but you may substitute it with whatever you desire. You can also skip the hotdog if you are a vegetarian and don’t eat meat.
On the same skillet, add a spoon of butter, but you may use olive oil too if desired. Next take a bowl, beat 3 eggs with some milk, salt and pepper and pour it on to the skillet. Cook it like scrambled eggs by moving the eggs around with a spatula on the skillet and when done, scoop it on to the plate.
To make a quesadilla, add a little butter to a griddle or Indian Tava, and slightly cook 2 tortilla’s or roti on both sides. Now make a quesadilla by adding a layer of shredded cheese, layer of onions and peppers, a layer of scrambled eggs, and sprinkle of some hot dog slices, and another layer of cheese. And top it with the second tortilla
Now cook this on both sides by pressing gently until the cheese is melted. Take it out and on cutting board cut into four wedges. You can repeat this process to the second set of quesadillas.
In a lunch box, line a tin foil and place two wedges each and fold the foil and pack the box. repeat this process and pack more lunch boxes.
In the Lunch bag to go with the quesadella’s, I also added a side of Lays potato chips, and small cutie orange, a small bottle of Gatorade. And for snack time a packet of Annies whole grain graham snacks.
