Aloo Palya-Boiled Potato Curry
Aloo Palya is a boiled potato curry which can be eaten with either deep fried Puri’s or Chapattis or becomes the stuffing for the south Indian Masala Dosa (rice and lentil crêpe).

Ingredients
  • 5 potatoes ( medium sized)
  • 1 onion
  • 1 t mustard seeds
  • 1 curry leaves ( 1 compound leaf/ 10 leaflets )
  • 3 dry red peppers
  • 2 T yellow lentils/ chana dal
  • 4 green chilies or (jalepenos- 2)
  • 1 t red pepper powder
  • 1 t turmeric or more
  • 1 t fresh ginger chopped
  • 1 t salt (add to taste)
  • 2 T cilantro or corriander leaves
  • 2 T oil
Instructions
  1. Wash and boil the potatoes either in a pressure cooker or a large pot. After the potatoes are boiled, peal the skin and mash it very lightly in a bowl. Specifically don’t mash them completely liked mashed potatoes, just break the potatoes apart in smaller pieces and set aside.
  2. In a non stick pan, pour 2 tablespoon of oil. When warm, add the seasoning ingredients. First add mustard seeds which sizzle and flutter in warm oil. If the oil is hot the seasoning gets burnt, so the temperature of the oil has to be moderately maintained. Next add the curry leaves, dry red peppers, and yellow lentils or chana dal.
  3. After seasoning, add the chopped ginger, chopped onions and chopped green chilies to the oil. When the onions get little translucent, add the spices; red pepper powder, turmeric, and salt.
  4. Before adding the potatoes, add ½ cup water to the pot. This helps for consistency and the cooking process. Now add the boiled and lightly mashed potatoes and let cook till the flavors of seasoning and spices coat the potatoes.
  5. Add the cilantro or coriander leaves at this point and serve warm with deep fried puri or a healthy chapatti or use these potatoes as stuffing for your Masala Dosa( rice and lentil crepe).
