Szechuan Green Beans
Inspired by the Chinese green beans, this recipe is an Indian- Chinese version of the green beans. It makes a great side dish with meat entrée’s and rice entrée’s.

Ingredients
  • 1 1⁄2 lb fresh green beans, trimmed
  • 4 garlic cloves
  • 4 green chilis peppers / jalapenos
  • 3 T vegetable oil
  • 2 T soy sauce
  • 1⁄4 c slivered almonds
  • ds salt- to taste
Instructions
  1. This recipe is best with fresh ingredients- only fresh beans and fresh garlic make this a crunchy garlicky recipe! Wash the green beans and trim the ends and set aside. Next crush the garlic and green chilli peppers in a blender or mortar pestle and set aside too.
  2. In a wok or large frying pan heat oil and add the green beans. Toss the green beans around and cook. The art to cook the perfect beans is when the beans are tender but still crisp. Set aside the beans after they are cooked.
  3. In the same pan add the green chili pepper and garlic paste and sauté till an aroma emanates. Now add the green beans and stir fry together. Drizzle soy sauce and sprinkle salt if required. Put the lid on the pan till the beans sweat along with the sauces for a few minutes.
  4. Lastly garnish with slivered almonds.
