Lunch box Ideas – Hummus,Tabouli, & Feta Sandwich

It’s a perfect example of healthy, wholesome, vegetarian sandwich which is easy to make for lunch boxes!

  • Yield: Makes 2 sandwiches
  • Prep Time: 5 minutes
  • Cook Time: 5 minutes

 Ingredients:

  • 4 slices whole wheat Bread
  • 4 tablespoons of Hummus*
  • 2 teaspoons of Tabouli*
  • 2 teaspoon  feta cheese
  • 8 slices of cucumbers
  • 4 slices of red pepper
  • 1 teaspoon  zatar powder* or dash of Salt and black pepper

   Directions:

  • Spread the 4 bread slices with Hummus.
  • Slice cucumbers and red pepper and stack on 2 slices of the hummus covered bread.
  • Top each of the stacked slices with a spoon of  Tubouli.
  •  Crumble some Feta cheese on top of each stack.
  •  Sprinkle some Zaatar powder on the stacked slices or just salt and pepper if Zaatar  is unavailable.
  •  Lastly place the other hummus covered bread slices on the stacked slices and make a sandwich. Cut into triangles if desired.
  •  Cover in a cling wrap to keep the sandwich from drying out. Pack in lunch boxes with a side of pitted green olives if desired.
  •  If eating at home, you may grill this sandwich after brushing the bread with some olive oil on the outside and serve warm. Another alternative is to skip the bread and use pocket pita bread and make a pita pocket with all the above ingredients in it. Its a delicious lunch indeed.

In the Lunch bag to go with the Hummus sandwich, I also packed a packet of Lays potato chips, a mandarin orange fruit cup, a small bottle of Gatorade and for snack time a  Quaker granola bar.

 * Hummus  is a Middle Eastern  food dip or spread made from cooked, mashed chickpeas blended with tahini(seseme paste), olive oil, lemon juice, salt and garlic.  ( It  can be made at  home,   but mine was store bought from  Phoenicia bakery, Austin ,TX or its available in every grocery store)

* Tabouli/ Tabbouleh is a Levantine Arab salad traditionally made of finely chopped parsley, mint, onion,bulgur/couscous, tomatoes, cucumbers and garlic and seasoned with olive oil, lemon juice, and salt. ( Mine was bought from Phoenicia bakery, Austin)

 * Zaatar/Zattr is a middle eastern condiment or spice mixture made from dried herbs,  Sesame seeds, dried sumac, and salt.Its a generic name for a family of related herbs from the genera Origanum (Oregano), Calamintha (Basil thyme), Thymus (typically Thymus vulgaris, i.e., Thyme), and Satureja (Savory). ( Its available in middle eastern stores, and  I got mine at phoenical bakery)
