Today Lunch- Tuna Salad Bagel/Sandwich

I have been making this simple yet delicious sandwich for many years for lunch boxes, picnics, or airplane travel ( now that they don’t serve more than peanuts;) )

Tuna Salad Sandwich Recipe
• Prep time: 5 minutes
Ingredients
• 1 can of tuna fish in water ( 6 ounce)
• 2 Tablespoons of Mayonaise
• 1/2 celery stalk, chopped finely
• ½ cup chopped lettuce
• 2 jalapenos, deseeded and finely chopped
• Lemon juice – few drops
• Salt
• 1 tsp olive oil
• Freshly Crushed black pepper
• Onion Bagels lightly toasted/ Whole Wheat Bread /chibatta bread.
• Sun dried tomatoes ( optional )


Method

After you open the can, drain the water out and scoop out the fish. I use the brands like starkist chunk light tuna or the chicken of the sea tuna both have worked well for me.

In a bowl mix together the tuna, mayonnaise, olive oil, salt and pepper. Add the jalapenos, lettuce, celery, or sometimes chopped red onion and mix together. A couple of drops of lemon juice add taste. At this point taste the salad and add salt and pepper if required.

Cut the bagel with the right knife, sometimes using the wrong knife and lack of time has created many a band aid moment in my life 😉 Toast the bagel lightly and slather the tuna salad on the bagel. Layer a lettuce leaf and sometimes I add few sun dried tomatoes and a horizontal slice of jalapeno (with out any seeds) for the added crunch in the sandwich. If you kids don’t like it spicy, skip the jalapenos, substitute bell pepper in the recipe.

Notes: Make sure you slather a lot of tuna salad on the bagel and when making the salad, make it more moist with good amount of mayonnaise or olive oil if packing in the bagel. Bagels can get dry in lunch boxes, also cover in tin foil to avoid dry bagels. Tuna Sandwich in wheat bread is a more popular lunch box treat;)
