Loquatious Loquat Plum Salsa
Loquat is a Chinese word but it’s also called the Japanese plum! Loquats are unique fruits which are sweet and tangy. When they are not in season, I developed a variation to my loquat recipe. To my batch of frozen loquats I have added 3 more varieties of plums. This exotic recipe was an award winning one in a salsa contest too 😉

Ingredients
  • 15 loquats
  • 1 plum
  • 1 peach
  • 1 plout
  • 1 plumcot
  • 4 jalapeños
  • 1 tomato
  • 1⁄2 orange bell pepper
  • 1⁄2 green bell pepper
  • 2 T cilantro(chopped)
  • 2 T mint leaves
  • 1 T green onion
  • 2 T lime juice
  • 2 T honey
  • ds salt
  • ds black pepper
Instructions
  1. Wash the Loquats, pit the seeds and chop the fruit. Wash, pit and chop a Peach, Plum, Plout and Plumcots to add to the sweet tangy flavor to the Loquats. Chop the green onion, jalapeño, tomato, bell peppers, cilantro and mint and bring together in a bowl after squeezing in some lemon juice and honey. Add a dash of salt and pepper and serve. It’s a colorful, fresh and exotic salsa. It goes very well with baked fish similarly like the Mango salsa.
Notes
It won me an award in a salsa contest, its that good ;) *I love to try out every kind of food or fruit wich makes one aware of the possibilities to make anything new. Plumcots and Plouts are combination fruits which are cross hybrid of apricots and plums! Well nature and science can do wonders;)
