Badam Harira -Almond Milk
Badam Harira is a nutritious and delicious almond and milk drink. Though harira means soup in the Mediterranean countries, harira is also a popular warm beverage/drink for strength and nourishment. It’s often served to moms after childbirth, nursing moms and as wholesome drink in Ramadan after a long day of fasting.

Ingredients
- Almonds- 20
- Rice- 1tblsp
- Split wheat- 1 tblsp
- Watermelon seeds shelled- 1 tsp (optional)
- Cantaloupe seeds (shelled) - 1tsp (optional)
- Milk- 4 cups
- Sugar- ½ cup (to taste)
- Water- 1 cup
- Ghee-2 tblsp
- Cinnamon stick-1
- Cardamom-4
Instructions
- Soak almonds in a cup of water overnight or for couple of hours to blanch the skin. Separately soak the rice, split wheat and other seeds in water too. Grind the almonds in a blender to fine paste. Next blend the rice and wheat and optional seeds to a paste and set aside.
- In a copper bottom or thick based pot add the ghee and warm. Add the cinnamon and cardamom to the ghee. It emanates a sweet aroma. Quickly and carefully add the milk to the pot. Next add the almond paste to the milk and let cook for some time. Lastly add the sugar and mix together. The ghee in the milk slowly rises up too.
- Drink warm.
Notes
A shortcut to blanching the almonds is by soaking it in water and microwaving it for couple of minutes. The skin peals of easily.
Almond milk beverage in a milder strength with lesser almonds and ghee etc can be a regular warm beverage to those who avoid caffeine.
