Bhindi Fry - Sautéed spicy Okra
Bhindi fry or sautéed spicy okra is a crispy and spicy side dish which is a great accompaniment to rice and curry or dal /lentil soup.

Ingredients
- 16 oz okra
- 1 onion
- 1 t mustard seeds
- 1 curry leaves
- 1 t red pepper powder
- 1⁄2 t turmeric
- 1 t salt
- 1 thai green chilis or jalapenos
- 2 T cilantro or corriander leaves (choppped)
- 2 T oil
Instructions
- In a non stick pan, pour oil. When oil is warm, add the seasoning. First add the mustard seeds which pop perfectly in warm oil. If the oil is too hot, the seasoning gets burnt, hence the temperature of the oil has to be moderately maintained. Next add the curry leaves, followed by chopped onions. When the onions get translucent, add the spices; red pepper powder, turmeric, and salt. The okra needs to be chopped to about ½ inch slices and added to the pan with the onion and spices. Add the chopped green peppers and cilantro and let cook on low flame with lid. Stir carefully, not to mush the okra.The okra has to get cooked with out any water. Adding water can make the okra mushy. The steam created in the closed pan should be enough to cook the okra. Cook till okra is cooked and crispy.
