Spinach Pilaf
This is a quick pilaf to make when you have lack of time but you want to boost your meal with healthy dose of iron, minerals and vitamins! Spinach, Carrots and Rice all together can be one dish meal by itself, or can be paired with meat or fish protein.

Ingredients
- • Basmati Rice: 3 cups
- • Chicken stock ( optional)
- • Oil
- • Onion-1 large, chopped
- • Garlic -2 cloves, coarsely crushed
- • Coconut flakes: - 3 tblsp
- • Spinach- 16 oz/453 gms
- • Carrots – 1.5 cups, grated
- • Green chillies – 3, slit
- • Red pepper powder-1 tsp
- • Salt-1 tsp
Instructions
- In a rice cooker or cooktop, cook 3 cups of basmati rice or any rice of preference, in chicken stock or water.
- While the white rice is cooking, start cooking the other ingredients.
- In a pot warm some oil, add chopped onions and pulp of coarsely crushed garlic and half of the coconut flakes. This adds to the aroma and flavors of the dish.
- Sauté the onions till translucent. Add split green chilies, frozen or fresh chopped spinach, salt, and red pepper powder to the pot. Cook together for some time, till the spinach softens.
- Add the grated carrots and cook further.
- Finally mix in the cooked white rice, and rest of the coconut flakes.
- Serve this with an Indian mango pickle, saboo dana-rice wafers or Lentil Papad wafers, and fried yogurt dried chilies.
