Shishito Peppers with Garlic Aioli

Blistered Shishito Peppers are your answer to an easy appetizer while it looks fancy restaurant style! Shishito peppers are thin-skinned mild east Asian peppers and taste great with little blistering and salt.  90 percent of them are mild, while 10 percent may be spicy, which makes it interesting.

Ingredients

  • Shishito Peppers- 8 oz
  • Kosher Salt/flaky salt – to taste
  • Sesame/Olive oil/Avocado oil

Quick Aioli : 

  • Garlic- 2 cloves
  • Mayo ⅓ cup 
  • Lemon Zest
  • Lemon juice- ½ lemon
  • Salt- to taste
  • Black pepper- dash
  • Garlic salt – dash

Preparation

  1. Take a bowl and toss the peppers with oil and kosher salt and set aside.
  2. Warm a cast iron pan and drizzle some oil, and spread all the peppers in a single layer on the pan. This gives all the peppers a blistered feel. Flip the peppers with tongs on both sides for an overall effect.  This process takes less than 10 mins. 
  3. Serve with a Lemon Garlic Aioli or any dipping sauce of your choice.
  4. To make the Garlic Aioli: Either you can simply mince the garlic cloves, or if you wanted a roasted feel, drop two cloves in the cast iron pan with the drizzled olive oil along with the peppers for a couple of mins, take it out and smash to paste and mix with the mayonnaise. Add lemon juice, salt, pepper,  and lemon zest. Mix thoroughly and serve.

Shishito Peppers are easily available in Whole Foods, Trader Joes, and even grocery stores like HEB, besides  Asian groceries like Hmart etc.
