Red Beef Curry
The Thai red beef curry gets its name from the red chili peppers used in abundance in the recipe. The recipe has been simplified from an authentic Thai version, adapting it for everyday cuisine with accessible ingredients. The taste remains amazingly hot and spicy.

Ingredients
- 1 lb beef sirloin
- 10 dry red chilies
- 3 dried kaffir lime leaves( can be skipped if unavailable)
- 1 T coriander seeds
- 1 t caraway seeds
- 1 t cumin seeds
- 1 onion (medium)
- lemon grass root ( can be skipped if unavailable)
- 4 clv garlic
- 13 1⁄2 oz cococonut milk
- 1 t ginger paste
- 1 t garlic paste
- 2 T sweet sour sauce
- 10 oz green beans
- 1 t chilie flakes
- 1 t red chilli paste
- salt to taste
- 1⁄2 t papaya paste / tenderizer
- 2 T ginger chopped( substituted for kha/thai ginger)
- 2 T oil
Instructions
- Soak the dry red chilies in warm water for 10 to 15 minutes, and drain out the water. You can microwave them for quicker softening. If using kaffir lime leaves soak in warm water and drain our water too.
- In a pan, dry roast the coriander, cumin and caraway seeds till a soft aroma emanates. Add these to the blender/food processor. In the processor also add the chopped onion, lemon grass root, garlic, ginger, the soaked red chilies’ and lime leaves. Make a paste of these ingredients and set aside.
- In a wok or large pan add the ginger garlic paste and sauté. To this add the meat and stir fry the beef. Next add the red curry paste and cook for some time. The papaya paste or tenderizer can be added at this time to tenderize the beef.
- Next add either fresh or frozen green beans to the meat and let cook. Lastly add the sweet and sour paste and coconut milk and let it cook further till the meat and vegetables are cooked. Add the chili sauce and red chili flakes before serving.
Notes
Lemon grass used in this recipe has a lot of medicinal uses. A tea decoction with lemon grass is said to help in cold cough, and congestion. It can be grown in warmer climates in your own back yard.
