Ingredients
- 1 cauliflower
- 4 T all purpose flour
- 4 T corn flour
- 2 T soy sauce
- 2 T red chilli sauce/sriracha chili garlic
- 1 T green chili paste
- 1 t ginger paste
- 1 t garlic paste
- 1 T vinegar
- 1 c cilantro chopped
- 6 green chiilies
- 3 curry leaves
- pn ajinomoto/msg
- salt to taste
- 1⁄2 T red pepper flakes
Instructions
- Wash the cauliflower in salt water after breaking it apart in florets and set aside.
- Make a marinade of ginger, garlic, cilantro, ½ of the green chilies, soy sauce, vinegar, red chilli sauce, green chilli paste and salt. Mix this marinade thoroughly with cauliflower and set aside for 1 hr ( you may use spoons/ spatulas in mixing it well to avoid burning your fingers with the spicy marinade! ) Before deep frying the cauliflower, add the corn flour, all purpose flour, green chillies, red pepper flakes, curry leaves, and ajinomoto*(optional) . Do check the consistency of spices and sauces and add more if required. Deep fry in warm oil.
- This fried cauliflowers are sometimes further sautéed in a Manchurian sauce of similar ingredients as the marinade. But, if you prefer crispy fritters, skip this step.
Notes
*Ajinomoto/MSG- This flavor enhancing ingredient is controversial for itd side effects and can be avoided. This recipe is about 15 years old when msg was not controversial!
