Lunch Box Ideas– Tropical Grill Cheese Sandwich

Like I mentioned earlier, with too many icy off days for school, no lunches getting packed, we had two whole loaves of bread sitting and had to do something before it got stale!!!

With the agenda to use up the bread, yesterday I made a  Caramel Bread Pudding. http://hotsweetspicyrecipes.com/caramel-bread-pudding/   But there is lot more to finish, hence we have been using it in grilled cheese sandwiches, tuna sandwiches, French toast and more.   But it’s no ordinary grilled cheese sandwich. We make it exotic and tropical with interesting fixings and keep changing the combinations too, for delicious outcomes. This is something the girls learned to make on their own since their elementary school days and there has been many interesting combinations over the years;) Below is the recipe for our topical grill cheese sandwich!grilled cheese sandwich2

Though a grilled cheese sandwich is best eaten when warm, it holds good in taste and flavors with all the fixings for a good lunch in the Box.

Tropical Grilled Cheese Sandwiches

Ingredients

 

  • 6 Slices Whole Wheat Bread
  • 3 Cheese Singles (cheddar)
  • 1/2 Onion- chopped
  • 1/2 Bell Pepper- red or orange -Seeded And Diced
  • 1 Tomato chopped
  • ¼ cup Pinapple Chunks ( optional)
  • 1 Jalapeno-chopped Seeded And Diced
  • 1 tsp Cilantro chopped
  • Salt –to taste
  •  Pepper- to taste
  • Butter – enough to spread

Preparation Instructions

This recipe is best made in a sandwich maker, since the sandwich maker’s closing process holds all the veggies and cheese together to make it an easy to eat sandwich.

Chop  the  onion, bell pepper, tomato, pineapple chunks, jalapenos or  green chilli peppers,  and  cilantro and keep ready.

Butter two slices of bread, layer a cheese single on one and arrange all the veggies on the cheese. Sprinkle some salt and pepper for good taste.   And top it with the other slice of bread.

Place it in the sandwich maker  and  smear more butter on top of the bread to keep it moist or spray some olive oil mist and voila in a couple of minutes we  have a delicious and  yummy  tropical grill cheese sandwich ready.

In a lunch box, line a tin foil and place the two triangles of sandwich and wrap it around and pack the box.

In the Lunch bag to go with the grilled cheese sandwich, I also add a side of   baked Lays potato chips,  small red apple &  a  bottle of water.  And for snack time a bar of Kellogs cereal bar.

A totally healthy and wholesome lunch 😉
