Caramel Bread Pudding
I love this dessert because it’s one of the easy recipes mom taught when I was learning to cook as a young girl. It’s easy and simple with a delicious output in less time! You may not believe it, but growing up I used to make this recipe in the pressure cooker. Now I make it more conveniently in the microwave!

Ingredients
- Sugar -1 ¼ cup
- Water-1/4 cup
- Orange zest ( optional)-1/4 tsp
- Bread- 5 slices of larger loaf( 6 of smaller loaf size)
- Milk- 2 cups
- Eggs- 4
- Vanilla essence-1/2 tsp
- Cinnamon powder- pinch(optional)
Instructions
- First step to make a caramel bread pudding is caramelization. For this take a square( 8X8) or round (about 24 oz) glass baking dish. Sprinkle about ¼ cup or less sugar and ¼ cup water and set in microwave to caramelize for a few minutes. This process involves checking every couple of minutes as the caramilization happens for different amounts of time according to your microwave power, thickness of your baking dish, size of sugar granules etc. When sugar is caramelized, evenly spread it around the base and sides of dish. Sprinkle some orange zest and set it aside to cool.
- Take 5 slices of bread. I use wheat bread at home, but if I am making it to share with others, I sometimes prefer to use white bread since it has more even consistency. Cut the ends of each slice of bread and set aside to soak in a bowl with 1 cup of warm milk.
- In a mixing bowl, beat the eggs, add ½ tsp or less of vanilla essence, 1 more cup of milk, 1 cup of sugar, a pinch of cinnamon and beat further.
- Pour the soaked bread without any lumps into the eggs and mix together. Take this mix and pour gently onto the caramelized baking dish.
- Set this baking dish in the microwave for 15 minutes or more according to the cooking progress.
- Garnish with fresh crème or some fresh fruit like berries.
Notes
When I used to make it in the pressure cooker, my recipe measurements were slightly different than in the microwave. If you want to make it in the conventional oven, you may want to cook it in the water bath like cheese cakes are baked. Water bath involves cooking process when you keep your baking dish in another large baking dish with inch of water in it and place it in the oven.
